Easy Baked Oatmeal
When I found out that oatmeal was good for milk production I began thinking of ways to incorporate more of it into my diet. I quickly realized that plain oatmeal was not going to do the trick! I played around with different recipes and finally found one that I absolutely love! One of the things that I love the most about this recipe is that I make it ahead and portion it out for the weekdays. This helps the mornings go more smoothly when all I have to do is heat up a delicious, healthy breakfast. My whole family loves it! I eat this multiple times a week and it helps keep up my supply! Do yourself a favor and try oatmeal this way! You will not be disappointed.
- 3 cups rolled oats
- 3/4 cup brown sugar
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 eggs, lightly beaten
- 2 1/2 cups milk
- 1 tsp vanilla
- 4 Tbsp unsalted butter-melted
- Fruit! As much as you would like! I usually use blueberries and strawberries. (Blueberries and peaches are delicious too!)
Preheat oven to 350
Combine all dry ingredients and set aside
Put half the dry ingredients down in a baking dish- top this half with your fruit- then put the other half on top
Whisk eggs, milk, vanilla and melted butter- Pour all over the dry ingredients
Shake it around to make sure all the oats get wet
Bake it uncovered for 40 minutes
**You can substitute things out if you want. I use flax milk instead of regular milk and you can substitute an all natural sweetener in for the brown sugar. I have also used egg whites in place of the eggs and it turned out perfectly fine!
**Get creative! Try all different kinds of fruits and combinations! Use more vanilla or cinnamon and just experiment. It’s fun and scrumptious!
